Honey and Soy Beef Skewers with Steamed Asian Greens and Rice

I am pleased to report that my Steamfest Challenge is well and truly back on track after the recent uninspiring fish cake meal. My converted Italian Sausage Gratin recipe worked out really well last night and we just gobbled up the leftovers with some freshly baked rolls for our dinner tonight. I promise I will post that recipe soon, but firstly I must post the other Steamfest recipe that I concocted during the week (so many recipes and so little time at the moment to post them). Anyway here is my simple but tasty thermomix recipe for beef skewers.


Honey and Soy Beef Skewers with Steamed Asian Greens and Rice

Ingredients:

Marinade:
1 clove garlic
75g organic honey
75g tamari or soy sauce
1 tsp sesame oil
2 tbsp lemon juice

500g trimmed, cubed beef (I use rump)
1 large red capsicum - washed and sliced into 3x3cm pieces
400g white, basmati or jasmine rice (can use less)
900g water
1 bunch Asian greens (bok choy, pak choy, choy sum etc) - washed and trimmed.

Method:

Drop garlic onto blades running at speed 7. Scrape down bowl.

Add honey and melt at 60 degrees for 1 minute at speed 2 if necessary.

Add other marinade ingredients and mix on speed 3 for 20 seconds.

Place meat and capsicum slices into a bowl and pour marinade over, stirring well. Cover with plastic wrap and refrigerate for several hours or overnight.

When ready to cook, weigh the rice into the steaming basket and then wash thoroughly. Add the water into the bowl and insert the steaming basket into the bowl.

Trim wooden skewers to fit into the TMX dish and tray.

Thread the meat and capsicum onto the skewers and place in varoma dish and tray.


Set the TMX cooking for 16 minutes at varoma temp, speed 4.

Add the Asian greens to the varoma dish when there is 5 minutes cooking time left. Stand the greens up around the kebabs on the edge of the dish (not covering the vents).

Notes:

Be careful not to overcook the meat and try to serve it straight away as steamed meat dries out quickly as it cools.  In other words don't fuss around too long taking photos!!!

Add other veg onto the skewers with the capsicum if you wish.
